Adding to the growing list of excellent New York style pizza places in the western suburbs of Chicago is Nemec Brothers Pizzeria in Glen Ellyn, which just opened in May of 2024. I’m Eric with Andersen Realty Group, and this is their third location, with one in Lakeview under the name of Zaza’s, and the other in Geneva. They’re relative newcomers, having only been established in 2021.
The Glen Ellyn location is about the same size as their city location. Their menus are very similar, and the pizza recipe is identical. Like the city location, Glen Ellyn has a few tables for dining in, and a few more tables just outside. Their counter is open so you can see into the kitchen and watch they make the pizzas. The Glen Ellyn location only been open for about a week as of this recording, and they’re already getting a lot of positive feedback and reviews.
The city location opened in 2021, and they’re well-established with a great reputation.
Nemec puts an upscale, artisanal spin on New York style pizza. They follow my Holy Trinity of pizza making: they ferment a generously-hydrated dough for 48 hours, use Stanislaus tomatoes, and Grande whole milk mozzarella cheese. Time really is a key ingredient in making pizza, as it allows the crust to develop a complex flavor profile. Nemec finishes their crust with a garlic rosemary olive oil and salt, baking their pizzas at 575 degrees. A perfect crust with quality ingredients from Stanislaus and Grande practically guarantee divine results.
I ordered their garlic twists, which aren’t these tiny little things you get at some places. These are substantial knots, similar in size to one of those cinnamon rolls you’d get at the mall. Nemec’s twists were crisp on the outside, chewy on the inside, and oily, garlicky, and full of flavor. Nemec also makes what they call Grandma Pies, which have a thicker crust and are baked in a square pan, like a Detroit-style pizza. The breadiness of their garlic twists reminded me of their Grandma pie, just without the sauce and they cheese. They also put a few pieces of Dubble Bubble gum in the bag with my twists as a nice surprise.
Their pizza is fresh and flavorful. I ordered their New York style this time, but I’ve also had the Grandma Pie at their Lakeview Location, and both were excellent. The closest thing I’ve ever had to Nemec’s pizza is the New Haven style pizza they serve at Piece Brewery and Pizza in Wicker Park. Nemec’s New York style pizza has a crisp, thin crust, and the ingredients are well-balanced and complement one another nicely. I don’t know if I read somewhere if they have a hint of sourdough in their crust of if I just made that up, but there’s definitely something uniquely delicious about their crust.
